The "Aviation" cocktail was invented by Hugo Ensslin. In the early twentieth century, he was head bartender at the Hotel Wallinck in New York. The original recipe includes gin, lemon juice, maraschino, and crème de violette. The crème de violette gives it its light blue, violet, almost purple color. There's even a subtle violet flavor in this crème, which gives this unmistakable cocktail its true character. A heavenly, refreshing cocktail whose overall flavor remains both subtle and mysterious, truly dreamlike. Serve in a martini glass with a maraschino cherry.
