The ‘Aviation’ cocktail was invented by Hugo Ensslin. In the early twentieth century he was head bartender at Hotel Wallinck in New York. The original recipe contains Gin, lemon juice, maraschino and creme de violet. The crème de violet provides the light blue, violet, almost purple color. There is even a slight violet flavor to this cream which provides real character to this unmistakable cocktail. A heavenly fresh cocktail where the overall taste remains subtle and mysterious at the same time, to dream away. Serve in a Martini glass with a maraschino cherry.
